My kids adore pasta. Yeah we’re Javanese alright, but they eat it like Italiano.
There are numerous pasta sauce recipe out there. I’ve tried them and done little modification based on my family’s liking. I wrote this because several friends keep asking bout my versions. But there’s still a lot of room to improve.
Pasta sauce can be freeze. But be sure to freeze them in small portion. This freezing method could save you big time during busy days..

Bolognaise Sauce

Ingredients
Olive oil
4 cloves grated garlic
1 big onion, chopped
250 gm minced meat (best you chopped ur self)
10 cherry tomatoes or 5 big regular ones
Italian mixed spice
Black pepper, crushed
Smoked paprika powder/chilli powder/chilli oil (optional)
Salt, sugar

Method
Placed tomatoes in baking tray. Drizzled with olive oil. Bake in the oven 150 degree C for 15 – 20 minutes. Remove the skin, processed them in food processor.
Heat 1 tbsp of olive oil. Stir fry chopped onion until becomes transparant colour. Toss in garlic, stir until fragrant.
Put the minced meat in, stir until 1/2 cooked. Toss in tomato puree. Wait until bubbling. Seasoned with black pepper, mixed herbs, salt, sugar & chilli. If it’s to thick, u can always add beef stock or water.
Serve. For freezing, leave it in room themp. Put it in ziplock. Put them in a freezer. For thawing, take the sauce out from freezer to fridge for 3 hour minimum. Than reheat in stove with low heat or in a microwave.

Creamy Corn Bolognaise

Ingredients
All of bolognaise ingredients above
Whole corn kernel, boiled
1/2 cup cooking cream

Method
Follow every step in bolognaise making above. In the final step, add in corn and cooking cream. You could always replace corn with other sweet veggies such as paprika, red beans, carrot, etc.

Carbonara Sauce

Ingredients
2 tbsp butter
2 cloves garlic, grated
1 cup cooking cream (can replaced with 1 tbsp all purpose flour + 1 cup milk)
Parmesan cheese (can replaced with grated cheddar chesse)
Black pepper, crushed
Italian mixed herbs
Salt, sugar
Button mushroom & sauted or fried beef bacon (optional)

Method
Melt butter, stir fry garlic until fragrant. Pour in cooking cream. If you use milk : add flour, stir quickly until forms a paste, pour in milk.
Toss in cheese, stir until combine.
Seasoned with black pepper, mixed herbs, salt, sugar.
U could add mushroom at this stage.
Serve with pasta, sprinkle fried beed bacon and chopped parsley or even dry chilli.

All of this sauce can be serve with all kind of pasta, rice even pizza. Mix and match can be fun.
For baked pasta or rice, make sure you made this sauce not too thick. Just arrange pasta or rice alternately with sauces in a baking pan. Top with mozzarella or quick melt cheese. Bake 170 degree C for 20 minutes.
